Breakfast or Lunch muffins

These savoury muffins are easy to make and will keep for several days in the fridge (can also be frozen) so great to make at weekends to have a healthy breakfast or lunch the whole family will enjoy. They are gluten free and can be made vegetarian by swapping the bacon for feta cheese.

Ingredients to make 12

4oz bacon (chopped finely)

4oz cheddar cheese

8 eggs (large or medium)

Medium red or white onion (chopped finely)

1 large or 2 small white or sweet potatoes (grated)

1 medium size courgette (grated)

1/2 cup milk

METHOD

Preheat oven to 180 (160 fan)

Saute the chopped bacon in non stick pan until browned - 6 - 8 mins (transfer to plate)

Saute the onions in any oil left from bacon (if not enough add dash olive oil or if too much bacon fat remove some) 2 -3 mins

Meanwhile grate peeled potato on large holes of box grater and with hands squeeze out excess water (not much will come out a sweet potato) then pat dry with paper towel

Once onions softened add grated potato and cook for 5-7 mins until potatoes softened and golden - remove from heat

Whisk the eggs, add milk and optional some tabasco sauce and garlic (bacon has enough salt but add pepper) and add bacon, potatoes, onions, courgette (raw) and most of the grated cheese.

Mix well and evenly distribute into12 moulds and sprinkle with remaining grated cheese

Bake for 20-25 mins (check cooked by inserting life and make sure comes out clean)

Let cool slightly before serving.

Other ideas:

*Add some feta instead of cheddar

  • Grated carrot or chopped cherry tomatoes instead of courgettes

  • Chorizo or smoked salmon instead of bacon

  • Sun-dried tomatoes and olives might be nice too(I use a silicone mould from Lakeland but you can also buy individual silicone moulds or just grease a regular muffin pan)

ps  I also threw together some sweet potato fritters (mark 1) but mixing eggs with grated sweet potato and frying but I'd like to try agin with some flour or gram flour plus bit more egg to get better result (ran out of eggs so it was just an experiment!)
